What is Kalai and Why Does It Wear Off?

Kalai is the traditional process of coating the inside of brass (and sometimes copper) cookware with a thin layer of tin (Sn). This tin lining creates a food-safe barrier between the brass and your food, preventing excess metal leaching - especially important when cooking acidic dishes.

Kalai wears off gradually through regular use - stirring with metal spoons, scrubbing during cleaning, and the natural friction of cooking all contribute to thinning the tin layer over time.

Signs Your Cookware Needs Re-Kalai

  • Visible brass showing through - If you can see the yellow brass colour on the cooking surface, the Kalai has worn off in that area
  • Metallic taste in food - A sign that brass is directly contacting your food
  • Uneven surface - Patches of shiny tin mixed with dull brass
  • Discolouration of food - Especially noticeable with light-coloured dishes like dal or kheer

How Often to Re-Kalai

  • Daily use cookware (kadhai, tawa): Every 3-6 months
  • Regular use (handi, bhagona): Every 6-12 months
  • Occasional use (serving vessels, special occasion cookware): Every 1-2 years
  • Serving-only vessels (katordan, thali): Rarely needed, as food contact is brief

Finding a Kalai-Wala

Traditional Kalai artisans (Kalai-walas) still operate in most Indian cities, especially in old market areas. They typically:

  • Charge Rs 50-200 per vessel depending on size
  • Complete the work in 15-30 minutes
  • Use pure tin heated over charcoal and applied with a cotton swab

Can You Cook Without Kalai?

For non-acidic foods (plain rice, roti, dry vegetables), cooking in un-Kalai-ed brass is generally considered safe and even beneficial (trace zinc absorption). However, for acidic foods (tomato-based curries, tamarind dishes, lemon rice), Kalai is essential.
