North Indian Cookware

Handi

The handi is a round-bottomed pot with a narrow mouth, designed for dum cooking (slow cooking with sealed lid). Made in brass or copper, it is essential for biryani, nihari, and slow-cooked curries. The narrow mouth traps steam, creating a pressure-like environment that tenderizes meat and infuses flavours deeply.

Degchi / Degh

A flat-bottomed, straight-sided pot used for cooking large quantities. The copper degh is the vessel of choice for halwais (sweet makers) and community kitchens. Its flat bottom ensures even heat distribution across the entire surface.

Kadhai

The Indian wok - a deep, wide vessel with handles on both sides. Brass kadhai is traditionally used for deep frying (jalebis, pakoras) and making gravies. The wide surface area allows for rapid evaporation, essential for getting the right consistency in Indian curries.

Patila

A straight-sided cooking pot, similar to a saucepan but without a long handle. Used for boiling, making dal, and general cooking. Available in brass and copper.

South Indian Cookware

Uruli

A wide, shallow vessel traditionally made in bronze (Kansa) or bell metal. The uruli is iconic in Kerala - used for making payasam, preparing Onam Sadya dishes, and as a decorative water bowl with floating flowers. Its wide surface area is perfect for dishes that need rapid evaporation.

Appam Chatti

A small, deep vessel with a rounded bottom, specifically designed for making appam (rice pancakes). Traditionally made in iron or bronze.

Rajasthani Cookware

Lagan

A wide, shallow vessel with a lid, used for making lagan ki biryani and other Rajasthani specialties. The brass lagan distributes heat evenly across its wide base, perfect for layered rice dishes.

Sipri

A small brass cooking pot used for tempering (tadka) and making small quantities of dal or curry.

Choosing the Right Material

  • Brass (Pital) - Best for kadhai, handi, and general cookware. Needs Kalai coating.
  • Copper (Tamba) - Best for degh, water storage, and specialty cooking. Superior heat conductivity.
  • Bronze (Kansa) - Best for uruli and serving vessels. Naturally food-safe.
